Homemade Apple and Cheese Scones

After making the Chocolate Chip Cookies, Belinda and I decided to try and tackle baking some Apple and Cheese Scones! I thought that was pretty ambitious of us on our first night baking together… but it actually went very smoothly! 🙂   Here’s a teaser pic before we get down to the actual work… looks good doesn’t it??

Ingredients: (makes 6 big scones)

2 firm apples
1 1/2 cups all-purpose flour
1/4 cup sugar
1/2 tablespoon baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter
1/2 cup cheddar
1/4 cup heavy cream
2 large eggs

Step 1: Preheat oven to 375 degrees.  Peel and cut apples into chunks.  Place them in a single layer on a parchment lined baking sheet.  The apples tend to shrink alot once it’s in the oven.  Leave in the oven for about 20 mins, till they take on a bit of colour and are dry to the touch.  Let the apples cool completely, they will be about half baked.

Step 2: Sift flour, sugar, baking powder and salt together.  Set mixture aside.  In a separate bowl, mix together the butter, cheese, apple chunks, cream and 1 egg.  Slowly add the dry mixture into the wet mixture.  Be careful not to overmix.

Step 3: Flour your countertop and place the scone dough on top.  Sprinkle some flour on top.  Gently roll the dough out to an evenly 1 1/4″ thickness.  Slice into 6 wedges.

Step 4: Place cut wedges onto a parchment lined baking sheet.  Whisk remaining egg with some salt to create an egg wash for the top of the scone.  Brush the scones with egg wash and sprinkle some sugar on top if desired.

Step 5: Place in oven and bake for about 30 minutes until firm and golden.  Once done, allow to cool on a wire rack for 10 minutes.

      hehe it was good! 🙂 the pics make the finished scones look like a slice of cheese pizza though.. but otherwise.. yummy… i think next time i’ll omit the apples and just make cheese scones though 🙂

    Awesome! Scott likes having a little bit of apple on his salad, but I never know what to do with the rest of the apple besides eat it! And we always have leftover cheddar from making tacos. Now I know what to do with them =)
