It was a cold rainy night and dinner was undecided. So after thinking it over with Colleen, we decided upon a soup dish and it had to be simple and clean. Off to Superstore we went to pick up a couple of ingredients and straight home to finally get dinner started! I prefer to eat relatively early(4pm), whereas Colleen prefers to eat at about 7pm(late!!)
Simple ingredients: Vegetable stock, oregano, easy blend flour (to thicken), potatoes,cauliflower, celery, onions and garlic. Salt and pepper to taste.
Keep the pieces as uniformly as you can as to make them cook evenly in the pot.
Place them into the pot in this particular order, onions, garlic, potatoes, cauliflower, veg stock and then the celery…..it just so that the cooking time is even for all.
Bring it all to a boil and stir slowly.
Add in the celery last because they tend to get mushy really quickly. Stir and add in the thickening flour as much or as little as the consistency you would prefer.
We served this soup with a side of toasted garlic bread and it was delicious. Totally hits the spot on a cold night.
All in all this soup was pretty easy to make with cheap ingredients that can feed about 6people.
